Stovetop Rice Pudding

3 cups cooked rice
4 cups milk, divided use
2/3 c. sugar
1/2 t. salt
2 eggs, beaten
2/3 cup raisins
2 Tbsp. butter or margarine
1 tsp vanilla
dash cinnamon or nutmeg

Combine rice 3 cups of the milk, sugar, raisins, and salt into heavy pan. Cook over medium heat, stirring occasionally until thick and creamy, 15-20 min. Blend remaining 1 cup milk and egg. Sir into rice mixture. Cook 2 min longer, stirring constantly. Add butter and vanilla. Spoon into serving bowls. Sprinkle with nutmeg or cinnamon. Serves 6.
