2 slices of your favorite bread
1 slice american cheese
1 slice provolone cheese
mayo (no substitute)
parmesan cheese
Preheat skillet. Spread one side of each slice of bread liberally with mayo, and sprinkle parmesan on mayo. Press lightly to help parmesan stick to mayo. This is the OUTSIDE of your grilled cheese.
Place one slice of bread, parmesan side down, into skillet. Add american and provolone slices, and top with remaining parmesan bread (parmesan side facing out). Grill until nicely brown. Flip and brown the remaining side. Serve hot.
***Mayo will not brown as quickly as butter, so this will allow the cheese on the inside to get nicely gooey.
