Egg Drop Soup

Easy, quick, cheap. Serve with some frozen egg rolls or potstickers. Serves 2-3.


4 cups chicken broth
1/2 cup cold water
1/4 cup cornstarch
2 eggs, beaten
1 green onion, sliced thinly

Bring broth to a boil. Stir cornstarch into cold water, and add to broth. Stir constantly until well mixed. Keep stirring occasionally. Add green onion. Remove boiling broth from heat. Stir beaten egg into broth. Stir twice, let sit 5 minutes. Add salt and pepper as desired.

My Favorite Meatloaf

2 lb. ground beef
3/4 c. milk
1 1/2 c. soft bread crumbs
2 tsp. salt
1/4 tsp pepper
1 medium carrot, shredded
1 small onion, diced
2 eggs, beaten

1/4 c. catsup
3 Tbsp. brown sugar
2 Tbsp. mustard

Pour milk over bread crumbs. Add ground beef, salt, pepper, carrot, onion, and eggs.
Mix thoroughly and form into a 9x5 loaf shape in a 9x13 pan. When meatloaf is half done (about 45 min), drain accumuated grease. Mix catsup, brown sugar. mustard and spread on meat loaf. Bake in 325 degree oven for 45 min...... 1.5 hours total.

Corn Chowder

2 slices bacon
1 small onion, diced
2 medium potatoes, nuked and diced
1 can cream-style corn (about 16 oz)
1 1/2 cup milk
2 Tbsp margarine
1 1/4 tsp. salt
1/2 tsp sugar
1/8 tsp pepper (i use a lot more)

Satue bacon and onion. Then add 3/4 cup water. Boil gently for a few minutes. Add corn, milk, butter, potatoes, and spices. Simmer, uncovered for 5 min, or until hot.

Porcupine Meatballs

1 pound ground beef
1/3 cup canned milk
2/3 can applesauce (about 10 oz)
2/3 cup minute rice
1/2 cup chopped onion
1 1/2 tsp salt
1/4 tst pepper (i use more)

2/3 cup catsup
2/3 cup water

Mix first 7 ingredients.Shape into 2-inch balls. Mix catsup and water; pour over meatballs. Bake at 350 for one hour.

Salt Scrub

Recipe used for Stake RS Spiritual Spa, Feb 2009

1 cup Epsom salts
1 cup sea salt
1 cup table salt
1 Tbsp. glycerin
1/4 cup canola oil
1/4 cup scented liquid hand soap...i like bath & body works scented soaps the best
Essential oil for additional scent, if desired
Food coloring, if desired

In a small bowl, whisk together glycerin, hand soap, oil,and additional scent or coloring until smooth. In a large bowl, combine salts. Stir liquid mixture into salts, stirring untilcombined. Makes about 3 1/2 cups.

To use: Scoop about 2 tsp. scrub into palm of hand. Rub vigorously on desired skin area. Rinse well.

Use salt scrub on rough hands, elbows, and feet. Do not use on open wound or on freshly shaven legs. Do not eat.

Stovetop Rice Pudding

3 cups cooked rice
4 cups milk, divided use
2/3 c. sugar
1/2 t. salt
2 eggs, beaten
2/3 cup raisins
2 Tbsp. butter or margarine
1 tsp vanilla
dash cinnamon or nutmeg

Combine rice 3 cups of the milk, sugar, raisins, and salt into heavy pan. Cook over medium heat, stirring occasionally until thick and creamy, 15-20 min. Blend remaining 1 cup milk and egg. Sir into rice mixture. Cook 2 min longer, stirring constantly. Add butter and vanilla. Spoon into serving bowls. Sprinkle with nutmeg or cinnamon. Serves 6.
